Tender chicken, golden potatoes, garlic, herbs, and a creamy sauce come together in one pan. It’s the kind of dinner that looks impressive on the table but is actually simple enough for a busy weeknight.
What you’ll need
- 500 g chicken thighs or chicken breast
- 4 medium potatoes
- 4 cloves garlic, minced
- 1 small onion, sliced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs
- Salt and black pepper
- Fresh parsley
- Optional: a handful of spinach
Start with the potatoes
Cut the potatoes into small, evenly sized pieces.
Heat the olive oil in a large oven-safe skillet over medium heat and cook the potatoes until they begin to develop a golden exterior.
You don’t need to cook them completely at this stage. They’ll continue cooking later.
Remove them from the pan and set them aside.
Give the chicken some color
Season the chicken with paprika, Italian herbs, salt, and black pepper.
Place it in the same pan and cook until the outside is nicely browned.
The goal here isn’t necessarily to cook the chicken completely through yet. You’re building flavor while leaving it to finish cooking in the sauce.
Remove the chicken and set it aside with the potatoes.
