I don’t know why this combination works but my church ladies keep requesting it for every single potluck.

This 5-ingredient slow cooker hash brown bake is the kind of potluck recipe that sounds a little random on paper but somehow disappears first from the table every time. It leans on frozen diced hash browns, cream cheese, and a few pantry-friendly staples to create a rich, creamy casserole with a crispy top that feels extra comforting during back-to-school season, when everyone needs an easy dish that can travel well and feed a crowd.

Serve this hash brown bake alongside baked ham, roast chicken, pulled pork, or simple deli sandwiches for an easy potluck spread. It also works really well with a green salad, steamed green beans, or fresh fruit to balance the richness, and if you are bringing it to a brunch gathering, it pairs nicely with scrambled eggs and a fruit tray.

Ingredients

1 bag (32 ounces) frozen diced hash browns

1 package (8 ounces) cream cheese, softened and cut into cubes
2 cans (10.5 ounces each) condensed cream of chicken soup
2 cups shredded cheddar cheese, divided
1 1/2 cups crushed buttery crackers

Main ingredients for hash brown casserole

Directions

1. Lightly coat the inside of a 6-quart slow cooker with nonstick spray or a little butter. Add the frozen diced hash browns, cream cheese cubes, condensed cream of chicken soup, and 1 1/2 cups of the shredded cheddar cheese. Stir until everything is evenly combined.

2. Cover and cook on low for 4 to 5 hours, stirring once or twice if convenient, until the potatoes are tender and the mixture is hot and creamy.

3. Sprinkle the remaining 1/2 cup cheddar cheese evenly over the top, then add the crushed buttery crackers in an even layer. Cover again and cook on high for 20 to 30 minutes, until the topping is warmed through and the edges are bubbling. If your slow cooker insert is oven-safe, you can place it under the broiler for 2 to 3 minutes to crisp the top more deeply.

4. Let the casserole rest for 10 minutes before serving so it sets up slightly. Scoop onto plates or serve straight from the slow cooker for an easy potluck dish.
