Step-by-Step Instructions

1. Prep the Crust

In a small bowl, crush your graham crackers into fine crumbs. Mix in the melted coconut oil or almond milk until the texture resembles damp sand. Press this mixture firmly into the bottom of a clean 12oz or 16oz mason jar to form your even base layer.

2. Whip the Cheesecake Filling

In a medium bowl (or a small blender for the smoothest texture), combine the Greek yogurt, protein powder, blended cottage cheese (or light cream cheese), and vanilla extract. Whisk vigorously until the protein powder is completely dissolved and the mixture is silky, thick, and lump-free.

3. Simmer the Quick Blueberry Compote

Add the 1/2 cup of blueberries and a tablespoon of water to a small saucepan over medium heat. As they heat up, gently burst the berries with the back of a spoon to release their juices. Once simmering, stir in the chia seeds and remove from the heat. Let it sit for 3-5 minutes; the chia seeds will absorb the liquid and turn it into a thick, glossy, naturally sweet compote.

4. Layer Your Masterpiece

Now for the fun part! Spoon half of your creamy protein cheesecake mixture over the graham cracker crust. Drop a few fresh blueberries on top of this layer for a burst of texture. Spoon the remaining cheesecake mixture on top, and finish by pouring the cooled blueberry compote over the very top.

Garnish with a handful of plump, fresh blueberries and a leaf of mint. For the absolute best texture, seal the jar and let it chill in the fridge for at least 2 hours (or overnight). This allows the crust to set and the flavors to fully meld together.
