Step-by-Step Instructions

1. Prep and Slice

  1. Scrub Thoroughly: Wash the lemons vigorously in warm water to remove any surface debris or natural waxes, then dry them completely.

  2. Slice Thinly: Using a very sharp knife or a mandoline slicer, cut the lemons into thin, uniform wheels roughly $\frac{1}{8}$-inch thick.

  3. De-seed: Carefully pick out and discard all the seeds, as dehydrating and grinding them will add an unwanted, intensely bitter note to your final powder.

2. Dehydrate

  • Method A (Dehydrator): Arrange the lemon slices in a single layer on your dehydrator trays, ensuring they do not overlap. Set the temperature to 57°C (135°F) and let them dry for 12 to 18 hours.

  • Method B (Oven): Place the slices on baking sheets lined with parchment paper. Set your oven to its lowest possible setting (typically around 65°C to 75°C / 150°F to 170°F). Prop the oven door open slightly with a wooden spoon to let moisture escape, and bake for 4 to 6 hours, flipping the slices occasionally.

  • The Test: The lemon slices are fully ready when they are completely brittle, snap easily in half, and contain absolutely zero sticky moisture or pliability.

3. Blend Into Powder

  1. Allow the dried slices to cool completely to room temperature.

  2. Place the brittle lemon wheels directly into a high-speed blender or clean coffee/spice grinder.

  3. Blend on high for 1 to 2 minutes until the fruit is completely pulverized into a fine, smooth, bright yellow powder.

  4. Sift the powder through a fine-mesh strainer to catch any larger unground bits, and re-blend those pieces if necessary.

  • Storage: Transfer the finished powder into an airtight glass jar. Keep it stored in a cool, dark pantry away from sunlight.
