Vegan Pecan Pie Brownies

Instructions:

For the Brownie Layer:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease or line a square baking pan.
  2. Mix Dry Ingredients:
    • In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. Combine Wet Ingredients:
    • In another bowl, mix together sugar, melted coconut oil, applesauce, and vanilla extract.
  4. Combine Wet and Dry Ingredients:
    • Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Bake:
    • Pour the brownie batter into the prepared pan and spread it evenly. Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (don’t overbake).

For the Pecan Pie Topping:

  1. Prepare Pecan Mixture:
    • In a bowl, combine chopped pecans, maple syrup or agave nectar, coconut sugar or brown sugar, melted coconut oil, vanilla extract, and a pinch of salt. Mix well.
  2. Add Topping:
    • After the brownie layer has baked, spread the pecan mixture evenly over the top.
  3. Bake Again:
    • Return the pan to the oven and bake for an additional 15-20 minutes or until the pecan topping is set.
  4. Cool and Slice:
    • Allow the brownies to cool completely in the pan before slicing into squares.
  5. Serve:
    • Serve your Vegan Pecan Pie Brownies and enjoy!

These brownies are a delightful combination of chocolatey richness and pecan pie sweetness, all while being vegan-friendly. Adjust the sweetness according to your taste preferences
