Marinated cucumber salad

Instructions

  1. Prep the Vegetables: Wash and slice the cucumbers into thin, even rounds. Chop the tomatoes and slice the onions thinly.

  2. Whisk the Dressing: In a small bowl, whisk together the vinegar, oil, water, sugar, salt, and black pepper until the sugar is dissolved.

  3. Combine: Place all the vegetables into a large non-reactive bowl (glass or ceramic is best). Pour the marinade over the top and toss gently to ensure everything is well-coated.

  4. Marinate: Cover the bowl and refrigerate for at least 2 hours. For the best flavor, let it marinate for 24 hours, tossing occasionally so the vegetables at the top can soak in the juices.

  5. Serve: Give the salad one final toss before serving chilled.

  • Creamy Version: Stir in 1/2 cup of sour cream or Greek yogurt to the dressing for a creamy, deli-style cucumber salad.

  • Spicy Kick: Add a pinch of red pepper flakes or thinly sliced jalapeños to the vegetable mix.
