Three-Layer Chocolate, Caramel & Granola Cake

In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In another bowl, whisk the eggs, milk, vegetable oil, and vanilla until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Slowly add the hot coffee or hot water while whisking. The batter will become quite thin, but this is normal and helps create a moist chocolate cake.

Pour the batter into the prepared pan and bake for approximately 30–35 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.

Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack and let it cool completely.

3. Prepare the Caramel
While the cake cools, make the caramel layer.

Place the sugar in a medium heavy-bottomed saucepan over medium heat. Allow it to melt gradually, stirring gently as it begins to dissolve.

Once the sugar has turned into a deep golden amber color, carefully add the butter. The mixture will bubble vigorously, so keep your hands and face away from the steam.

Slowly pour in the heavy cream while stirring continuously.

Continue cooking for another 1–2 minutes until the caramel is smooth and slightly thickened.

Remove from the heat and stir in the vanilla and salt.

Allow the caramel to cool until it is thick enough to spread but still soft and creamy.

4. Prepare the Granola Topping
Place the granola in a bowl. Add the melted butter, honey or maple syrup, cinnamon, and a pinch of salt.

Toss everything together until the granola is evenly coated.

Spread it over a parchment-lined baking sheet and bake at 350°F (175°C) for approximately 8–10 minutes, stirring once halfway through.

Watch it carefully because granola can go from golden to burnt quickly.

Remove it from the oven and allow it to cool completely. As it cools, it will become crisp.

5. Assemble the Cake
Once the chocolate cake is completely cool, use a serrated knife to carefully cut it horizontally into three even layers.

Place the first cake layer on a serving plate or cake board.

Spread a thin layer of caramel over the cake, leaving a small border around the edge.

Place the second cake layer on top and repeat with another layer of caramel.

Add the final chocolate cake layer on top.

Spread the remaining caramel over the top of the cake. Allow some caramel to gently drip down the sides for a beautiful homemade finish.

6. Add the Granola
Immediately sprinkle the cooled granola generously over the caramel-covered top.

Gently press a few pieces into the caramel so they stay in place.

For an extra-decadent finish, drizzle melted chocolate over the granola. You can also add a few extra caramel drips and a tiny pinch of flaky sea salt.

7. Chill and Serve
Place the finished cake in the refrigerator for approximately 30–60 minutes. This gives the caramel time to firm slightly and makes the cake easier to slice.

Remove the cake from the refrigerator about 15 minutes before serving.

Use a sharp knife to cut it into wedges, wiping the knife between cuts for cleaner slices.

Tips for Success
Cool the cake completely before cutting it. A warm chocolate cake can crumble when divided into layers.

Don’t make the caramel too thin. If it is still very runny, let it cool longer before spreading.

Watch the caramel carefully. Sugar can burn quickly once it begins changing color.

Add the granola shortly before serving. This helps preserve its delicious crunch.

For extra chocolate flavor, add chocolate chips to the cake batter or drizzle melted dark chocolate over the finished cake.

This three-layer cake is all about contrast. The chocolate layers are soft and rich, the caramel is smooth and buttery, and the granola provides a satisfying crunch on top.

For an especially impressive presentation, serve each slice with a small drizzle of warm caramel and a sprinkle of extra granola. The combination of chocolate, caramel, and crunchy granola makes every bite indulgent, textured, and completely irresistible.
