  • 1 cucumber, thinly sliced

  • 1 small carrot, julienned or shredded

  • ½ red bell pepper, thinly sliced

  • 2 green onions, chopped

  • Fresh dill (optional, finely chopped)

For the Dressing:

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar or lemon juice

  • 1 tsp Dijon mustard

  • ½ tsp honey or sugar (optional)

  • Salt & black pepper to taste
