Homemade Pickled Tomatoes with Rice, Garlic & Spices (Jar Preserved Tomatoes)

Method

 

  1. Wash the tomatoes thoroughly and remove any damaged parts.
  2. Sterilize glass jars by washing and pouring boiling water over them.
  3. Place a layer of cooked or rinsed rice at the bottom of each jar.
  4. Add garlic, onion slices, herbs, and tomatoes in layers until the jar is full.
  5. Mix salt, sugar, and vinegar with boiling water to prepare the preserving liquid.
  6. Pour the hot liquid into the jars until the tomatoes are completely covered.
  7. Close the jars tightly with sterilized lids.
  8. Place jars in a pot of hot water and process them for safe long-term storage.
  9. Allow the jars to cool completely before storing them in a cool, dark place.
